Brisket, ribs, sausage, and sides—by the pound, Tuesday through Sunday in East Austin.

The Craft

Post oak, patience, and premium cuts

Every brisket starts with careful sourcing. We cook whole animals over post oak in offset smokers—no shortcuts, no gas, no wrapping until the meat tells us it’s time. That’s why we serve until we sell out, and why the line forms early.

It takes 12–18 hours to smoke a brisket right. We think that wait is worth it—and so do the people in line.
